On our recent visit to Albuquerque, New Mexico, we visited a number of the locations that appeared regularly in the incredible Breaking Bad TV SerieFrom Walter and Skyler White’s house to the A1A car wash, these locations are memorable features of the show, alongside the RV, Walter’s underpants and the iconic blue meth.
Most notable for us here at GeekPlate, however, was Los Pollos Hermanos, the chicken shop run as a drug front by Gus Fring.
In reality, Los Pollos Hermanos is Twisters, a burrito fast food outlet used for filming both the interiors and exteriors for Breaking Bad.
There was no fried chicken on the menu (we ordered some chicken nuggets as a mild tribute), but a large Los Pollos Hermanos mural still graces one of the walls.
Close, but even after travelling all the way to Albuquerque, it looked like if we wanted to try Gus Fring’s chicken, we’d have to make it ourselves.
Los Pollos Hermanos Fried Chicken Recipe
Ingredients:
1x chicken, cut into pieces
600ml buttermilk
2 tbsp salt
1 tsp black pepper
2 eggs
1/4 cup sriracha (or other hot sauce)
2 cups flour
1 tbsp salt
1 tsp black pepper
1/2 tsp Cayenne pepper
1 tsp ground sage
1/2 tsp smoked paprika
1/2 tsp ground coriander
1/2 tsp garlic powder
Oil for deep frying (peanut, grapeseed or vegetable oil)
Method:
Combine buttermilk with salt and pepper in large glass or plastic container. Add chicken, mix thoroughly, cover and leave overnight.
Combine flour with salt, pepper, cayenne, sage, paprika, coriander and garlic powder.
Combine eggs with hot sauce.
Drain chicken until mostly dry. Put flour mix into large freezer bag then, two or three pieces at a time, add chicken and shake until thoroughly coated.
Put dusted chicken aside until all are done. Do not discard flour mix.
Roll each piece of chicken through egg mixture until coated, then place back into flour mixture.
Coat each piece in the same way, then leave to sit for 15 minutes to allow crust to stick to chicken.
Heat oil in deep fryer or saucepan until 175c. Cook chicken, three pieces at a time, for 12-15 minutes, or until golden. Juices should come out clear when knife is inserted to the bone.
Serve with fries or biscuits and gravy.
